Ingredients:
- Vegetable Idli
- Ingredients:
- Two cups of Rice
- 1/4 cup urad dal
- 1 Potato
- 50 grams shelled green peas
- 1 carrot
- 25 grams carrot
- 1/4 cup chana dal
- 1 tsp cumin seeds
- 1 small onion, minced
- 1 bunch of sliced coriander leaves
- 2 tblsps finely grated coconut
- 4 green chillies, minced
- A pinch of eating soda
- Salt as per taste
- 1/2 inch ginger
Method:
- Soak dal and rice in water for around 6 hours.
- Steam cook all the vegetables and mince them.
- Extract thick juice from coconut.
- Grind rice, dal, ginger, cumin seeds and chillies to a paste.
- Mix in all the vegetables, coconut, coriander leaves, onion ,salt, baking soda and enough coconut milk to form a thick batter.
- Set aside for 1 hour.
- You can use small round idli plates. Grease them with ghee or oil. Fill the idli containers with about 3/4 batter each.
- Steam these till the idlis are firm. You can also test this by inserting a knife or a toothpick and see if they come out clean. Steam again if some batter sticks to the knife or toothpick.
- Once the idlis are prepared, remove and serve with side dishes as per liking.
