Vegetable Idli Recipe


 

Ingredients:

  3. Two cups of Rice
  4. 1/4 cup urad dal
  5. 1 Potato
  6. 50 grams shelled green peas
  7. 1 carrot
  8. 25 grams carrot
  9. 1/4 cup chana dal
  10. 1 tsp cumin seeds
  11. 1 small onion, minced
  12. 1 bunch of sliced coriander leaves
  13. 2 tblsps finely grated coconut
  14. 4 green chillies, minced
  15. A pinch of eating soda
  16. Salt as per taste
  17. 1/2 inch ginger
Method:
  • Soak dal and rice in water for around 6 hours.
  • Steam cook all the vegetables and mince them.
  • Extract thick juice from coconut.
  • Grind rice, dal, ginger, cumin seeds and chillies to a paste.
  • Mix in all the vegetables, coconut, coriander leaves, onion ,salt, baking soda and enough coconut milk to form a thick batter.
  • Set aside for 1 hour.
  • You can use small round idli plates. Grease them with ghee or oil. Fill the idli containers with about 3/4 batter each.
  • Steam these till the idlis are firm. You can also test this by inserting a knife or a toothpick and see if they come out clean. Steam again if some batter sticks to the knife or toothpick.
  • Once the idlis are prepared, remove and serve with side dishes as per liking.
